Our Ouachita and Chester blackberries sit at the top of our “mountain” and their flavor is certainly tops! They have stunning lavender flowers that bloom in the spring unlike many of their “wild cousins” which have white blooms. Blackberry jam more closely mimics the flavor of black raspberry jam than other cane berry jams. The “hearts” of blackberries remain in the fruit while raspberries “shed theirs” when they’re plucked. So the blackberry jam has more body and texture than raspberry jam does.
